Green fruity olive oil

Our 10-hectare olive grove is composed of several species: Aglandau, Bouteillan, Cayon, Picholie, Gros Ribier, Petit Ribier or Bécu de Lorgues, one of the most ancient Provence variety, and specific to our village. Among our 1,700 trees, only 800 give olives for our 500-litre high quality oil production.

Production

After the olives are manually harvested, they are transported to our oil mill partner in order to extract the oil. This structure’s equipment allows a precise control of the temperature to assure a cold extraction and guarantee against oxidisation. The olives are first cleaned from dust and striped of their leaves. They are then grinded with their stones which hold a naturel acid preserving the oil. During this step, called the cold pressing, the temperature is scrupulously maintained at 27°C. By way of decantation, the liquid is then parted from the paste and finally centrifuged to separate the water from the oil.

Sensory features

Pleasurable and well balanced, our 2018 extra-virgin oil reveals hints of fresh herbs and asparagus, typical of green fruity olive oils from Provence. There is no bitterness, a sign of quality. The oil draws out on a nice fervence.

Food pairing

This fresh olive oil will pair beautifully with cooked meals as well as salads.
