Ripe fruity olive oil
Our 10-hectare olive grove is composed of several species: Aglandau, Bouteillan, Cayon, Picholie, Gros Ribier, Petit Ribier or Bécu de Lorgues, one of the most ancient Provence variety, and specific to our village. Among our 1,700 trees, only 800 give olives for our 500-litre high quality oil production.
Production
For this olive oil, we work hand in hand with a traditional oil mill functioning with hydraulic force. When they arrive, the olives are places in a vat and grinded by millstone. The paste is then put on scourtins, hemp filters, which are piled up in the hydraulic press. The separation of the water from the oil is then made by decantation and by hand with the help of a sheet metal.
Sensory features
Our ripe fruity olive oil is very round and soft. One after the other, the aromas reveals themselves: smoked aromas, undergrowth and mushroom aromas and finally, dried fruit aromas.
Food pairing
This generous and soft olive oil will go beautifully with cold meals, like salads or meat or fish carpaccios.
