This vintage reflects all the creativity and know-how of our domain. It is composed of two grape varieties blends : one grape variety for structure and one other for freshness. This vintage name symbolizes the golden ratio : mathematical value noted in the Nature, symbol of universal harmony, infinity and reminding the making process of this wine.
Carefully harvested at dawn, the grapes are delicately pressed in whole clusters to extract only the best, most delicate juices. Fermentation is carried out in stainless steel tanks during its beginnings. Once arrived at mid-fermentation, the wine have passed in an ovoid concrete tank. This particularity brings complexity, originality and minerality to our wine. It will be aged in these ovoid vats on total lees for 1 year and a half.
A beautiful pale salmon color. A delicate nose which opens with a floral and slightly powdery side, focused on violet. A smooth and mineral mouth where finely peppery notes are revealed embellished with subtle hints of citrus like tangerine or grapefruit. Its mouth presents a beautiful roundness and a sweet sensation. The finale stretches over a length with a beautiful, quite remarkable bitterness.
This structured wine will pair wonderfully with white fish like turbot accompanied crunchy vegetables or a sea bream ceviche. A prawn risotto will perfectly harmonize with the mineral side of this range. On the dessert side, the 1.618 will enhance a varied cheese board.
