All the grapes are hand-picked and sorted twice before vatting to ensure a harvest of impeccable quality. Maceration is carried out in truncated concrete vats also known as tulip-shaped vats. During this, the grapes are gently extracted by means of manual pumping over and punching down. Devatting takes place after a post-fermentation maceration phase. The wines are then matured in French oak barrels for 12 months before blending. A further 6 months’ ageing is carried out in tulip-shaped concrete vats before bottling.
A brilliant garnet-red colour. A nose of red fruit (redcurrant, raspberry) with hints of vanilla. Peppery on the palate, followed by a touch of liquorice. A lovely mineral tension with a marked, elegant tannic structure. The refreshing finish is enhanced by a slight touch of bitterness. This wine stands out for its ageing potential (between 5 and 6 years).
Perfectly balanced, this wine is ideal with prime rib with three peppers, smoked pigeon with prunes, or refined dark chocolate dishes.
