This wine is different from the white wines of our region: our aim is to convey the purest expression of our terroir. Produced from a parcel of old vines on limestone marl, this wine reveals all the nuances and mineral richness of our terroir.
The grapes are carefully picked and sorted by hand, then gently pressed into whole bunches to extract only the best and finest juice. Fermentation takes place partly in 500L French oak barrels (18% new, the rest in barrels from 2 to 5 years old) and partly in 225L ovoid sandstone vats to intensify the minerality of our limestone soils. The wines are then aged for 12 months on lees, before being blended. A further 8 months are spent in concrete vats before bottling.
Pale yellow color with clear, brilliant silver highlights. A nose of great finesse, with subtle aromas of exotic fruit (pineapple, passion fruit) and balsamic notes (buttery, toasted, dried fruit), marked by persistent chalky notes. The palate reveals a supple, generous texture that lingers on mineral and saline notes with delicate roasted nuances. The finish reveals a gourmet length, well-balanced and sustained by a beautiful freshness.
Clos Blanc wine goes particularly well with scampi carpaccio, grilled octopus, white meats in a creamy sauce or a risotto with summer truffles and Parmesan.
