BLEND & WINEMAKING PROCESS
Grape variety: Syrah 55%, Cabernet-Sauvignon 45%
Alcohol: 13.5%
Meticulously harvested, Syrah grapes are put into vats in
entire bunches. Cabernet Sauvignon and Mourvèdre are
completely destemmed. A long maceration in concrete
open truncated-cone tanks is led with manual punchdown
and pump-over. After a 12-month maturation in
500L barrels followed by an additional 6-month rest in
stainless-steel tanks, the wines age another 18 months
in bottle to gain harmony.
SENSORIAL CHARACTERISTICS
A deep and dense red colour. A nose with blackberry
and blackcurrant hints, enlivened by wild scents, ink
and precious wood. The mouth is fleshy with smooth
and deep tannins. The initial attack is followed by a
liquorice finish. The complexity of this wine will allow
it to go through several decades.
WINE & FOOD PAIRING
This wine pairs magnificently with complex courses
like a young wild boar haunch grilled with vegetables
and chestnuts or with a roasted venison noisette and its
juniper-berry sauce.
